Per portion (makes 2-3 small pancakes):
1 mashed banana
1 Tbsp defrosted or fresh blueberries
3 Tbsp oats
½ Tbsp chia seeds
½ tsp cardamom or cinnamon powder
optional: chopped walnuts or sunflower seeds
Mix all ingredients in a bowl.
Put a little vegetable fat or coconut oil into a pan.
Pour the mix into the pan to make 3-4 smaller pancakes.
Fry on medium heat a few minutes on either side.
Serve warm. Option with fresh berries. Great as a snack after your workout too!
